Paying both of your movie tickets because you asked her out to the movies because you really want to see Avenger 7: Hulk smashes the statue of liberty while Iron Man looks longingly at Captain America just a little bit longer than is acceptable to placate fujos
Alternatively buying her a movie she's been eyeing to watch together at home, but not the Romantic Comedy she really wanted (unless that's the movie you really wanted to see, I'm not suggesting anything but some of them aren't half bad)
Cooking a fancy dinner (and not asking to split the cost) because you a grown ass man who knows more than noodles and pancakes
Paying for a trip to the zoo/amusement park/RODEO SHOW YEEHAW
Getting appliances and SOMETHING to make it seem less like a gift to yourself but it's TECHNICALLY for the both of you
Cheap stuff like chocolate and not-the-absolute-cheapest-box-wine-poured-into-a-fancier-bottle-you-keep-reusing-secretly that you can just go out and buy as a little gift on the weekend and still get a cut on
Not the best examples because I'm a loser with no idea about date and gift ideas but point being you spend it on something both of you can enjoy, together, like a happy little couple of dorks
Just going hurr here have expensive X or gift card is just shitty unless its a special occasion and you know you'll get something of similar value in return is like giving a prostitute money and just sending her on her way, not to mention its unimaginative and not very caring
